Thanksgiving Leftovers: Fried Mac & Cheese Balls
Thanksgiving always brings a rush of excitement for family, festivities, and of course food. Often, there are tons of leftovers of delicious dishes prepared from the big day. What to do with those leftovers? Here is a recipe to repurpose one of my absolute favorite Turkey Day meals: Mac & Cheese!
Fried Mac & Cheese balls are easy to make and perfect for sharing with your loved ones. Crispy on the outside and tender on the inside, they’ll melt in your mouth once you sink your teeth in. Best of all, you probably have all of the extra ingredients you need to transform your Thanksgiving mac right in your kitchen ready to go.

Ingredients:
Macaroni & Cheese (make sure that it is chilled)
2 eggs (Large or Jumbo)
1.5 cups of Italian bread crumbs (Panko can be substituted)
3/4 teaspoon of garlic powder
1/2 teaspoon of freshly ground black pepper
1/2 teaspoon of thyme
1/2 teaspoon of coriander
1/2 teaspoon of oregano
1/2 teaspoon of cayenne pepper (optional if you like a kick)
1.5 cups of vegetable oil
Directions
Use a spoon to scoop up the macaroni to form into 1-inch sized balls (or form the palm of your hand into a cup for measurement). Place macaroni balls onto a baking sheet lined with wax paper. Make sure balls are firm. If not, chill in the freezer for 30 minutes.
Beat egg in a small dish with a little water. In another small dish, mix the breadcrumbs and seasonings together.
If you have a deep fryer, heat up oil until hot. If preparing on the stove, use a deep saucepan to heat up oil until hot.
Dip macaroni balls into the egg wash and then roll in the breadcrumbs, then repeat.
Fry mac & cheese balls in small batches so they cook evenly. Fry for 3-5 minutes or until the outside is crispy and golden brown. Drain on paper towels.
Ready to eat! If you want, shave a little Parmigiano and top with basil leaves.
